Wine of the Month at The White Haus
It's (almost) Christmas and this is an absolute classic for a reason. Champagne is actually one of the best value wines you can buy - after partial oak ageing, this bottle was kept in Bollinger's cellars for at least 3 years and even includes some wine that has been aged lovingly for 15 years. 85% of Bollinger's grapes are from Grand Cru vineyards and 60% of the blend is Pinot Noir - a notoriously (and financially) difficult grape to grow. All this adds up to a very complex Champagne that is desperate to be drunk. A super pairing with all things fried, nibbles and fish dishes.
